Spicy Gingerbread Men

Spicy Gingerbread Men
Eileen's Spicy gingerbread men. This is the only recipe we have ever used. For best flavor, do NOT use blackstrap molasses.

Spicy Gingerbread Men

Ingredients :
Original recipe makes 2 1/2 dozen
  • 1/2 cup margarine
  • 1/2 cup sugar
  • 1/2 cup molasses
  • 1 egg yolk
  • 2 cups sifted all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ginger
  • 1/2 teaspoon ground nutmeg

Directions :
  1. In a large bowl, cream together the margarine and sugar until smooth. Stir in molasses and egg yolk. Combine the flour, salt, baking powder, baking soda, cinnamon, cloves, ginger, and nutmeg; blend into the molasses mixture until smooth. Cover, and chill for at least one hour.
  2. Preheat the oven to 350 degrees F (175 degrees C). On a lightly floured surface, roll the dough out to 1/4 inch thickness. Cut into desired shapes with cookie cutters. Place cookies 2 inches apart on ungreased cookie sheets.
  3. Bake for 8 to 10 minutes in the preheated oven, until firm. Remove from cookie sheets to cool on wire racks. Frost or decorate when cool.

Kahlua Cake Bites

Crumbled devil's food cake with chocolate frosting and Kahlua make sweet, decadent cake bites. by Kahlua® 
Kahlua Cake Bites

Ingredients :
Original recipe makes 40 cake bites.
  • 1 (18.25 ounce) package devil's food cake mix
  • 1 cup water*
  • 1/3 cup vegetable oil*
  • 3 eggs*
  • 1 cup ready-made dark chocolate frosting
  • 1 cup Kahlua
  • 6 ounces chocolate disks for melting

Optional:
  • 2 ounces white chocolate disks for melting

Directions :
  1. Prepare the cake mix according to package directions. Allow cake to cool for one hour.
  2. Crumble cake into a large bowl. Mix in Kahlua. Add frosting and stir until combined. Mixture will be sticky. Cover and refrigerate 2 hours or overnight.
  3. Line a baking sheet with waxed paper. Use a melon baller to form 2 inch bites; place on waxed paper. Freeze bites for one hour or until firm enough to coat.
  4. Using a skewer, pick up bites one at a time and dip into melted chocolate. Use another skewer to slide bite onto the lined cookie sheet. Allow bites to set in refrigerator.
  5. Optional: After bites have set, use a pastry bag fitted with a #3 tip to drizzle melted white chocolate.

Ingredients :
Original recipe makes 1 9 1/2-inch cheesecake.
  • 1 1/4 cups graham cracker crumbs
  • 1/4 cup white sugar
  • 1/4 cup butter, melted
  • 2 pounds sweet potatoes
  • 3 (8 ounce) packages cream cheese, softened
  • 7/8 cup white sugar
  • 1/3 cup sour cream
  • 1/4 cup heavy whipping cream
  • 3 eggs, room temperature
  • 3/4 cup packed brown sugar
  • 1/4 cup butter
  • 1/4 cup heavy whipping cream
  • 1 cup chopped pecans

Directions :
  1. Preheat oven to 350 degrees F (175 degrees C ).
  2. Mix together graham cracker crumbs, 1/4 cup sugar, and 1/4 cup melted butter. Press mixture into the bottom of a 9 1/2-inch springform pan. Bake 10 minutes; remove from oven and set aside. Keep the oven on.
  3. Place potatoes in a baking dish. Bake until a knife inserted in center goes through easily, about 1 hour. Cool sweet potatoes enough to handle, peel, and puree.
  4. Beat cream cheese and 3/4 cup plus 2 tablespoons white sugar until smooth. Mix in sour cream, 1/4 cup cream, and 1 1/2 cups sweet potato puree. Beat in eggs one at a time, blending well after each. Pour filling into crust.
  5. Bake in 350 degrees F (175 degrees C ) oven until a tester inserted near the center comes out clean, about 1 hour (center may still be slightly jiggly).
  6. Turn off the oven. Let cake stand 1 hour in oven with door ajar.
  7. Combine brown sugar and 1/4 cup butter or margarine in a heavy small saucepan. Stir over low heat until sugar dissolves. Increase heat, and bring to a boil. Mix in 1/4 cup cream, then nuts. Pour hot topping over cheesecake. Store leftover cheesecake in the refrigerator.

Cook's Note:

  • This recipe uses fresh roasted sweet potatoes, but you may substitute 1 1/2 cups canned sweet potato puree instead.

  • 2 1/4 cups sifted cake flour

  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground ginger
  • 1/2 cup butter, room temperature
  • 1 cup dark brown sugar
  • 1 cup white sugar
  • 2 eggs, room temperature
  • 3/4 cup buttermilk, room temperature
  • 3/4 cup mashed sweet potatoes
  • 1/2 cup finely chopped golden raisins

Directions :
  1. Preheat oven to 350 degrees F (175 degrees C). Grease two 9-inch round cake pans.
  2. Sift together cake flour, baking powder, soda, salt, cinnamon, allspice, and ginger.
  3. Mix together buttermilk, sweet potatoes, and raisins in a medium bowl and set aside.
  4. Beat butter, brown sugar, and white sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color.
  5. Add room-temperature eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Pour in the flour mixture alternately with the milk and sweet potato mixture, mixing until just incorporated. 
  6. Divide batter between prepared pans and spread evenly.
  7. Bake in preheated oven until a tester inserted in the center of each layer comes out clean, about 30 minutes. Cool cake layers on wire rack. Remove from pans and frost as desired.

Ingredients :
Original recipe makes 1 9-inch pie
  • 3 cups cooked, mashed sweet potatoes
  • 1 cup butter, room temperature
  • 3 cups white sugar
  • 4 egg yolks
  • 1 cup half-and-half cream
  • 1 teaspoon vanilla extract
  • 1 (9 inch) pie shell
  • 1/4 teaspoon ground nutmeg

Directions :
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a large bowl, combine the hot sweet potatoes; mash with butter. Stir in sugar and allow to cool slightly.
  3. Beat in the egg yolks one at a time, mixing thoroughly after each addition. Blend in cream and vanilla. Pour into pie shell and dust top with grated nutmeg.
  4. Bake 10 minutes at 400 degrees F (200 degrees C). 
  5. Reduce oven temperature to 375 degrees F (190 degrees C), and bake until center is set, about 35 minutes more.

  • 2 tablespoons grated orange zest

Directions :
  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch tube pan. Sift together flour, baking powder, cinnamon, baking soda, nutmeg and salt. Set aside.
  2. In large mixing bowl, cream butter and sugar until light and fluffy. Add mashed sweet potatoes and vanilla. 
  3. Beat until well blended. Add eggs, one at a time (the batter will look curdled). Add flour mixture to potato mixture. Beat on low until combined.
  4. Pour batter into 10 inch tube pan. Bake at 350 degrees F (175 degrees C) for about 1 hour and 20 minutes, or until a wooden toothpick inserted into cake comes out clean. Cool cake for 20 minutes in the pan, then invert onto serving plate.
  5. To make the glaze: in a small bowl, combine confectioners sugar with 3 to 5 teaspoons orange juice to achieve drizzling consistency. 
  6. Spoon over warm cake and sprinkle with orange zest if desired.

  • 1/4 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 cup chopped walnuts (optional)

Directions :
  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 12x18 inch pan. Sift together the flour, baking powder, baking soda, salt and cinnamon. Set aside.
  2. In a large bowl combine sugar and oil. Blend in vanilla and pumpkin, then beat in eggs one at a time. Gradually beat in flour mixture. Stir in nuts. Spread batter into prepared 12x18 inch pan.
  3. Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

  2. In a large bowl, mix the flour, 2 cups sugar, salt, baking powder and baking soda. Blend in buttermilk, 1 cup of butter, 2 teaspoons of vanilla and 4 eggs. 
  3. Beat for 3 minutes at medium speed. Pour batter into prepared pan.
  4. Bake in preheated oven for 60 minutes, or until a wooden toothpick inserted into center of cake comes out clean. Prick holes in the still warm cake. Slowly pour sauce over cake. Let cake cool before removing from pan.
  5. To Make Butter Sauce: In a saucepan combine the remaining 3/4 cups sugar, 1/3 cup butter, 2 teaspoons vanilla, and the water. Cook over medium heat, until fully melted and combined, but do not boil.

  1. Beat butter until creamy. Gradually beat in white sugar and brown sugar. Beat in eggs and vanilla. Combine flour, baking soda, and cocoa. Gradually add to butter mixture, beating well. Stir in 1/2 cup walnuts. Cover and chill at least 2 hours.
  2. Preheat oven to 375 degrees F (190 degrees C).
  3. Combine remaining 1/2 cup nuts with the 1 tablespoon sugar. Divide the dough into 4 parts. Work with one part at a time, leaving the remainder in the refrigerator until needed. 
  4. Divide each part into 12 pieces. Quickly press each piece of dough around a chocolate covered caramel. Roll into a ball. Dip the tops into the sugar mixture. Place sugar side up, 2 inches apart on greased baking sheets.
  5. Bake for 8 minutes in the preheated oven. Let cool for 3 to 4 minutes on the baking sheets before removing to wire racks to cool completely.

  • 1/2 cup poppy seeds
  • 1 (21 ounce) can lemon pie filling
  • 1 (3.4 ounce) package instant lemon pudding mix
  • 1 cup milk
  • 1 (8 ounce) container frozen whipped topping, thawed

Directions :
  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
  2. In a large bowl, stir together cake mix and vanilla pudding mix. Make a well in the center and pour in eggs, oil water and poppy seeds. 
  3. Beat on low speed until blended. Scrape bowl, and beat 4 minutes on medium speed. Pour batter into prepared pan.
  4. Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool completely. Spread lemon pie filling over the cooled cake.
  5. In a large bowl, mix instant lemon pudding with milk. Mix well and let stand about 5 minutes until fairly set. Fold in thawed whipped topping. Spread over pie filling. Refrigerate for at least 4 hours before serving.

  2. In a large bowl, mix together cake mix and pudding mix. Pour in water and egg whites. Beat on low speed for 1 minute. 
  3. Increase speed to high and beat for 4 minutes. Pour batter into prepared 10x15 inch pan.
  4. Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool completely.
  5. In a large bowl, combine milk, lemon extract and vanilla pudding mix. Beat on low for 2 minutes. Fold in whipped topping. Spread over cooled cake. Store cake in refrigerator.

  4. Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, or until toothpick inserted into center of cake comes out clean. 
  5. Cool for 10 minutes, then remove from pans and finish cooling on a wire rack. Fill and frost as desired.

Directions :
  1. Pour the half and half into a microwave safe mug and heat in microwave for 45 seconds.
  2. Remove the mug from the microwave and place the tea bag in the mug to steep.
  3. Mix butter for one minute with electric mixer on medium speed. Add powdered sugar, cinnamon, ginger, cardamom, cloves and vanilla extract. Mix at low speed. After powdered sugar is incorporated into the butter, increase speed to medium and add the tea infused half and half.
  4. Add additional powder sugar if frosting needs a stiffer consistency.
  5. Use immediately or store in a sealed container in the refrigerator up to one month.

Directions :

  3. Lower heat to medium and stir in celery, carrot, green pepper, and peas. Fry until vegetables are crisp-tender. Stir in beaten egg and cook just until egg is scrambled and firm.

Ingredients :
Original recipe makes 1 9-inch 6-layer cake.
  • 9 egg whites
  • 8 egg yolks
  • 1 cup white sugar
  • 1/4 cup milk
  • 1 tablespoon lemon zest
  • 1 pinch salt
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups sifted all-purpose flour
  • 1/2 tablespoon shortening
  • 1 cup white sugar
  • 1 recipe Chocolate Buttercream

Directions :
  1. Preheat oven to 400 degrees F (205 degrees C). Have ready two 10-inch cardboard circles. Generously grease a 9-inch springform pan with soft butter, and dust with flour.
  2. Beat the egg whites until frothy, and gradually add 1 cup sugar. Beat just to soft peaks. In another bowl, beat the yolks with the milk, lemon peel, vanilla, and salt. Fold this into the egg whites. Sift the flour over the egg mixture, and fold in.
  3. Spread 1 1/3 cups batter into the prepared pan. Bake for about 5 to 9 minutes, or until small, brown spots begin to appear on cake. Remove the cake from the oven, and remove layer from pan with a spatula. Dust the cake lightly with flour, and place on a rack to cool. 
  4. Grease pan again, and repeat this process until all of the batter is used, about 6 times more. Place the layers between wax paper, and cover with a towel. Chill layers for a few hours. Make the Chocolate Buttercream.
  5. Layer the chilled layers on one of the cardboard rounds with the buttercream. Start with one layer; cover with the buttercream, and then press down with another layer to make a good seal. Repeat this with the remaining layers, but reserve one layer. Wrap the cake in plastic, and chill for at least 6 hours along with the remaining buttercream. Grease the other cardboard round with the shortening, and place the last layer on it.
  6. Place 1 cup sugar into a non-stick skillet over medium heat. Allow sugar to cook until the edges look melted and brown. Begin stirring with a wooden spoon. Cook until the sugar become an amber color, and is smooth. Carefully pour the caramel over the top of the last layer, and spread to the edges with an oiled knife. 
  7. Quickly, using an oiled knife, indent the top of the caramel into 16 wedges. Allow to cool slightly, and then retouch the indents with the knife again. Place layer onto a counter top dusted with sugar, and allow the caramel to cool completely.
  8. Place some more buttercream on top of the chilled torte, and top with the caramel round. Frost the sides with the remaining buttercream. Chill the torte before serving.

  • 3/4 cup low-fat (1%) milk

Directions :
  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x9-inch pan.
  2. Beat butter and sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. 
  3. Add room-temperature eggs one at a time, allowing each egg to blend into butter mixture before adding the next. Beat in vanilla extract with last egg. 
  4. Combine flour and baking powder, and add to butter mixture, mixing well. Stir in milk until batter is smooth. Pour or spoon batter into prepared pan.
  5. Bake in preheated oven until cake springs back to the touch, 30 to 40.

Footnotes :

  1. This recipe can also be made into muffins. Line a muffin pan with paper liners instead of using a 9x9-inch pan. Bake muffins for 20 to 25 minutes.

  • 1/2 cup butter or margarine
  • 1 cup white sugar

  • 2 ripe bananas, mashed

  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt

Directions :
  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch square baking dish.
  2. Beat butter and sugar with an electric mixer in a large bowl until light and fluffy; beat in eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. 
  3. Stir bananas into butter mixture.
  4. Sift flour, baking soda, and salt together in another bowl. Stir flour mixture into banana mixture until batter is evenly blended. Pour batter into prepared baking dish.
  5. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 30 minutes.

Cook's Note :

  • You can sift a thin layer of confectioner's sugar over the top a minute or so after it comes out of the oven if you want it to look fancy, but the browned top has a nice rich nutty taste all by itself.

Directions :
  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round cake pans.
  2. Separate the eggs and set aside.
  3. Stir the baking soda into the buttermilk. Cream 1/2 cup of the butter or margarine with the white sugar. Add the egg yolks, and vanilla, beating well. Add flour alternately with the mashed bananas. Stir in the buttermilk mixture.
  4. Beat the egg whites until stiff. Stir the pecans into the cake batter then fold in the egg whites. Pour batter into prepared pans.
  5. Bake at 350 degrees F (175 degrees C) for 25 minutes or until cakes test done. Let cakes cool in pans.
  6. To Make Icing: Cream 3 tablespoons butter or margarine with the confectioners' sugar. Stir in the heavy cream until well blended. Spread icing on to cooled cake layers. Top with pecan halves if desired.

  • 3/4 cup rolled oats
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup sour cream
  • 1 cup mashed bananas

Directions :
  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round cake pans.
  2. Combine flour, oats, baking soda, baking powder and salt in a medium size bowl.
  3. In a large bowl, cream the butter or margarine. Add brown sugar, sugar, allspice and nutmeg; beat until light and fluffy. Mix in eggs and vanilla extract. 
  4. Add 1/3 of the dry ingredients to the butter mixture; mix well. Add the sour cream; mix well. Add another 1/3 of the dry ingredients; mix well. Add half of the bananas; mix well. Repeat with remaining 1/3 of the dry ingredients and remaining bananas. Pour batter into prepared pans.
  5. Bake until cake tests done, about 30 minutes. Let it cool in the pan for 5 minutes, and then turn onto wire rack to cool. Frost with Allspice Cream Cheese Frosting.

  3. Mix 3/4 cup oats, 1/3 cup brown sugar, melted butter or margarine, walnuts, and cinnamon together until crumbly. Sprinkle evenly over the top of the batter.
  4. Bake in preheated oven at 350 degrees F (175 degrees C) for 40 to 45 minutes, or until it tests done. Transfer to a rack to cool.

  • 1 (18.25 ounce) package chocolate cake mix
  • 1 (8 ounce) package cream cheese, softened
  • 2 tablespoons butter, softened
  • 1 tablespoon cornstarch
  • 1 (14 ounce) can sweetened condensed milk
  • 1 egg
  • 1 teaspoon vanilla extract

Directions :
  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt pan.
  2. Prepare cake according to directions on package. Pour into Bundt pan.
  3. In a medium bowl, beat together cream cheese, butter (or margarine) and cornstarch until fluffy. Gradually beat in sweetened condensed milk, egg and vanilla until smooth.
  4. Pour cream cheese mixture evenly over cake batter.
  5. Bake at 350 degrees F (175 degrees C) for 50 to 55 minutes. Cool for 10 minutes in the pan, then turn out onto a wire rack and cool completely. Glaze with Chocolate Glaze, or as desired.

  2. In a large bowl, mix together the cake and pudding mixes, sour cream, oil, beaten eggs and water. Stir in the chocolate chips and pour batter into a well greased 12 cup bundt pan.
  3. Bake for 50 to 55 minutes, or until top is springy to the touch and a wooden toothpick inserted comes out clean. Cool cake thoroughly in pan at least an hour and a half before inverting onto a plate If desired, dust the cake with powdered sugar.

Directions :

Ingredients :
  • 5 tablespoons red wine vinegar
  • 3 tablespoons grapeseed oil
  • 1/3 cup chopped fresh cilantro
  • 2 limes, juiced
  • 1 teaspoon white sugar
  • 3/4 teaspoon salt
  • 2 cloves garlic, minced
  • 1 (1 pound) package frozen shelled edamame (green soybeans)
  • 3 cups frozen corn kernels
  • 1 pint cherry tomatoes, quartered
  • 4 green onions, thinly sliced
  • 1 (15 ounce) can black beans, rinsed and drained

Directions :
  1. In a large serving bowl, whisk together the red wine vinegar, grapeseed oil, cilantro, lime juice, sugar, salt and garlic. Set aside.
  2. Bring a large pot of lightly salted water to a boil. Add the soybeans and boil for 3 minutes. Add corn to the boiling water and continue cooking for 1 more minute. Drain very well, and pour into the bowl with the dressing. Gently mix in the cherry tomatoes, green onions and black beans. Cover and refrigerate for at least 2 hours before serving to chill and blend the flavors.
